This is a true-blue barbecue joint where “the pig is the hero”. Pat Martin is a barbecue legend who learned to smoke his meat while attending college in West Tennessee, and people come from all over to see the meticulous way in which they cook their super fresh meat. Everything is made from scratch every day, and you’ll never get day-old food. Even the snobbiest Memphis barbecue fans have given this place props. What can we say? They’re smokin’.

Little known fact: when Hilary Diff wrote “This Is What Dreams Are Made Of” in the moments directly following the first time she tried Edley’s pork nachos (ok maybe not, but it would totally make sense). While not a traditional barbecue dish, the pork-covered homemade potato chips topped with tomatoes, sour cream, and a TON of cheese are a local favorite. Edley’s has combined the barbecue tradition with the southern meat-and-three tradition, and the result is totally delicious. Watch out for their seasonal items (meat + barbecue sauce + peaches from The Peach Truck = YUM), and make sure you load up on those sides. If you’re enjoying the long weekend with an adult beverage, don’t skip the bushwhackers – they’re basically 21+ milkshakes.

Sure, Jim ‘n Nick’s might not be the mom-and-pop shop it once was, but doesn’t that tell you it must be pretty dang good? The barbecue joint has expanded to 34 restaurants since it’s Birmingham beginnings in 1985, and it’s become a southern mainstay that still fights for culinary authenticity. Come for the savory smoked turkey and the double decker sandwich (you get brisket AND pork); stay FOREVER for the ridiculously addictive cheese biscuits. ‘Betcha can’t eat just one. Solid whiskey offerings too!

Peg Leg Porker is fairly new on the barbecue scene, with its flagship store opening up in the trendy Gulch neighborhood in 2013. But don’t mistake pitmaster Carey Bringle as a barbecue rookie! Bringle’s family has been smokin’ meat for decades, and he’s brought that rich tradition to Nashville. Already voted one of the top 10 barbecue joints in the nation, Peg Leg Porker is known for it’s fall-off-the-bone dry rub and it’s equally tender chicken that you get when you order the Yard Bird. Tons of local craft brews, and make sure you slather on the barbecue sauce – it’s homemade.

Many a Nashville local knows that some of the best food in the city is on Jefferson Street. If you’re not into mild barbecue sauce, Mary’s will be your saving grace. The tangy, orange sauce is less of a smoky addition and more of a Memphis-style hot sauce that will definitely hog the spotlight (pardon our pun). The short rib sandwich will basically put a super tender rack of ribs between two pieces of bread. Simple, elegant, to-the-point. Bring a shirt you don’t mind getting hot sauce all over.
